The first step is to cook pasta in a large pot. Put it in boiling water with some salt until it is ready. When it is done, drain it well and leave it aside. You can save some pasta water for later to loosen the sauce.
The second step is to cook the bacon or the meat you have chosen. Place the slices of meat in a frying pan with some olive oil for 6 minutes or until they are crispy. Turn them a few times then add the minced garlic and stir until aromatic. Put them aside as well and save the remaining fat for later.
Next, you need to put the eggs with the grated parmesan in a bowl. Whisk them until combined very well. Leave aside.
Now in the same frying pan, you used for meat, move the pasta and the meat slices and toss them together. Then add to them the parmesan eggs that you prepared earlier and move altogether. If you find that the sauce is dense, add some water gradually until it becomes silky and creamy. Remember you have saved some pasta water at the first step, so you need it now. Add salt and pepper to taste. Pay attention that you do not want the eggs to scramble and ruin your dish. So, a good tip here is to keep the heat low at this stage or even turn it off as the eggs will get cooked with the heat of the pasta and the other ingredients. Don’t worry about that.
