Berry Cheese cake
Ingredients of the base:
200 g chocolate biscuits or Oreo cookies
3 tablespoons unsalted butter
Ingredients of the filling:
200 g chocolate
400 g cream cheese
0.5 cup icing sugar
1 tablespoon vanilla extract
A pinch of salt
0.5 cup whipping cream at room temperature
Ingredients of the topping:
85 g dark or milk chocolate
0.5 cup whipping cream
In a food processor, turn the biscuits into fine crumbs. In a bowl, combine them well with butter and spread them in a springform pan. Press tightly to form the base of your cheesecake then freeze for half an hour or refrigerate until set.
Prepare the filling meanwhile. Melt the chocolate in the microwave or a bowl put it over simmering water and put aside. Whip cream cheese until fluffy then add icing sugar, a pinch of salt, and vanilla extract, and whip everything again.
In the same bowl add the melted chocolate and mix very well then set aside. Whip cream until stiff peaks. Add the cream to the filling and fold gently until well combined. Pour the filling over the base and spread evenly with a knife. Refrigerate for a few hours or until set.
For the topping, heat chocolate and whipping cream together and combine well. Pour the topping over the filling and again refrigerate for at least 1 hour. Release the cheesecake and enjoy your chocolate dessert.
Mini Mango Chees ecake
Ingredients of the crust:
200 g digestive biscuits ir cokies
80 g butter
Ingredients of the filling:
1 tablespoon lemon juice
300 g cream cheese
250 g yogurt
60 g icing sugar
0.5 whipping cream
Turn the biscuits into crumbs in a food processor. In a bowl, add butter to the crumbs and combine. The crust is ready to use in the cupcake pan. Press firmly and refrigerate for 1 hour.
Prepare the filling now. In a blender, mix mango pieces with lemon juice to get mango puree. In a bowl, whisk cream cheese until fluffy then add yogurt and sugar and whisk again. Add the mango puree over the cream cheese mixture and whisk until combined well. Prepare one cup of cream by whipping until stiff peaks. Add the cream to the mixture and fold gently. Add the filling over the base evenly and refrigerate until firm.
For the topping, decorate with mango puree and mango cubes and enjoy the mango flavor that everyone loves.
